Blanc du Blanc

Blanc du Blanc from 100% Prié Blanc — a grape that grows almost nowhere but here, on ungrafted vines between 900 and 1,200 meters in the shadow of Mont Blanc. There’s a reason this altitude makes such good sparkling wine: the fruit ripens slowly and holds the acidity that lower vineyards lose by August, which is exactly what a base wine wants. The Blanc du Blanc from this tiny cooperative ferments first in steel, then spends time in barrique before the second fermentation — a little roundness to carry all that mountain tension — and then two full years on the lees in bottle. Straw-gold with green glints and a fine, insistent bead. Floral and fruited on the nose, balanced and long on the palate, and only 11.5% alcohol.
