WINEMAKING
Vinification. The maceration can last between 35 and 45 days and it’s characterised by the old-fashioned technique of the submerged cap. The long skin contact and high concentration of the grapes give birth to complex aromas and a very persistent aftertaste.
Aging: The aging continues in 30Hl oak casks and then, in concrete before being bottled.
