Tasting Notes:
Color: Ruby red with purple highlights.
Bouquet: A classic hint of morello cherry with notes of bramble, spice and licorice.
Taste: The aromatics are confirmed on the palate. Pretty fruit, pleasant acidity and gentle tannins. The finish is spicy and medium-long.
Alcohol: 13.5%
Serving Temperature: Serve at a 18-20°C (64-68°F).
Pairing: Hearty meals like wild game stews, roast game bird, mature cheeses, and fish dishes with rich, tomato-based sauces.

Vinyard Notes:
Production Area: Hills of Pesaro, 12 km east of the Adriatic coast.
Elevation: 100 meters (325 feet) a.s.l.
Exposure: Eastern.
Soil: Sand and clay sedimentary layers.
Training System: Spurred cordon.
Density: 6,900 vines/acre.
Yield: 55-65 quintals.
Average Production: 45-50 hl.

Winemaking Notes:
Harvest: Mid-September.
Vinification: The training system and very low yields per vine, give a product that is always healthy and rich in sugar, tannins, extract etc. The vinification takes place in temperature-controlled stainless steel vats from 50 to 80 hl. However, thermal conditioning is rarely used during the fermentation process.
Aging: 16-months in 225 liter oak barrels, then held in the bottle for six months before release.
