Grillo

Born where ancient Greeks once tread, Akrille’s Grillo springs to life from sun-drenched hillside vineyards perched 400–600 meters above the Sicilian sea. Rocky limestone soils and cool mountain breezes impart of burst of white flowers, zesty citrus, and ripe pineapple, with a crisp, mineral finish. Lively, refreshing, and undeniably Sicilian.

Tasting Notes:
Color: Brilliant straw yellow with greenish reflections.
Bouquet: White flowers, citrus zest, green apple, and a subtle herbal lift.
Palate:  Crisp and focused with pronounced sapidity and mineral tension. Flavors of lemon, green pear, and pineapple carry through to a long finish with lingering jasmine.
Alcohol: 13%
Serving Temperature: Chilled 16-18° C (60-64° F) Food Pairing:  Grilled branzino with capers, crispy fried calamari, or a platter of fresh ricotta and light antipasti.
 

Vinyard Notes:
Production Area: Sourced from hillside vineyards at 400–600 meters in Chiaramonte Gulfi, Ragusa. Rocky calcareous soils and pronounced diurnal temperature swings preserve natural acidity and build aromatic complexity.
Elevation: 400–600 meters above sea level.    

Winemaking Notes:
Harvest: Clusters are hand-harvested in late August, followed by a brief cold maceration and temperature-controlled fermentation in stainless steel tanks.
