Trebbiano Spoletino, Spoleto
Trebbiano Spoletino is one of Italy’s most thrilling rediscovered white varieties, grown exclusively in the hills around Spoleto and Montefalco — and Cantina Scacciadiavoli has been at the forefront of its renaissance since the beginning. Harvested late in October to coax out every last layer of complexity, the grapes are vinified in amphorae — an ancient technique that unlocks the variety’s mysterious, richly aromatic character — then aged nine months in untoasted barrels and amphorae before resting a further nine months in bottle.

Palate: Aromatics are confirmed on the palate, expressed with a fresh pleasant acidity, and a finish that is crisp and persistent.
Alcohol: 13.5%.
Serving Temperature: Serve well chilled – 8/10° C (46-50º F).
Food Pairings: Farro and legumes, grilled and fried fish, shellfish, seafood salads, soft cheeses and as an apertivo.
