Bouquet: Delicate nose with scent of grass with mineral notes.
Taste: Soft tannins on the palate with fresh and balanced acidity. The finish is elegant, pleasant with medium length.
Alcohol: 13.5%.
Serving Suggestion: Serve at a 16-17°C (61-63°F) in a tall, fairly wide goblet.
Pairing: Grilled and stewed meats. Mature cheeses.
Production Area: Commune of Castorano (Ascoli Piceno).
Elevation: 230 meters (750 feet) a.s.l.
Exposure: Eastern.
Plant Density: 1,400 vines per acre.
Planting System: Spurred cordon.
Soil: Clayey.
Yield: Cabernet Sauvignon 30 quintals/ha., Montepulciano 60 quintals/ha.
Vinification: The grapes are vinified separately in stainless steel tanks under controlled temperature with a 15-20 day maceration, with frequent daily pump-overs. Racking into small oak barrels is followed by malolactic fermentation.
Aging: A short period of time in barrel then 3-months in bottle before release.
