Bouquet: Wild berries, nuances of aromatic herbs and spices, Mediterranean scrub, white chocolate, and cinnamon.
Taste: Red berries, spice and a hint of citrus with soft tannins, bright acidity, and a fresh and balanced taste.
Pairing: Roasted meats: poultry, veal, pork, squab (pigeon) with quince purée, spicy lamb meatballs in a tomato and cilantro sauce, beef stew, and savory (not hot-spicy) Asian-style dishes.
Vineyard: 500ft. a.s.l. on a northern exposure.
Vine Density: 1,800 vines per acre.
Average vine age: 5 years old.
Production Area: Commune of Offida, in the Marche region of Central Italy.
Training System: Spurred cordon.
Soil: Mainly calcareous clay.
Harvest: Hand-picked at the end of September.
Yield: About 2 tons per acre.
Vinification: Submerged cap with frequent pump-overs each day for 5-7 days at temperatures of 22-25°C (72-77°F). After racking, aging in stainless steel tanks with natural malolactic fermentation.
Aging: In 500 liter. tonneaux for about 8 months.
