Fiano Cilento “Donnaluna”

Donnaluna takes its name from a riff on “Donna Lee,” the bebop standard made famous by Charlie Parker and Miles Davis — because in the Cilento, even the white wines swing.Picked in the cool of early morning from hillside vineyards overlooking the Mediterranean, De Conciliis’ organically grown Fiano rests briefly on its skins, then ferments and ages in steel to keep every note bright. Expect white peach, citrus blossom, wild herbs, and a saline mineral encore straight off the sea breeze.

Color: Pale straw yellow.
Bouquet: Aromas of white peach, pear, citrus blossom, chamomile, and wild Mediterranean herbs.
Palate: Fresh and gently creamy, with ripe stone fruit framed by vivid acidity and a distinctly saline, mineral finish.
Alcohol: 13%
Serving Temperature: Chilled 16-18° C (60-64° F)
Food Pairing: Mozzarella di Bufala, seafood pasta, grilled fish, fritto misto, white pizza, medium-aged cheeses.

Production area:  Six estate hillside parcels near Prignano Cilento.
Vineyard exposition and altitude: Southwest, South and Southeast.
Vineyard soil type: Clay-calcareous Cilento flysch soils (non-volcanic).
Vine training method: Double Guyot
Time and method of harvest: Manual harvest from 8th - 15th of  September.

Winemaking Notes:
Vinification: In temperature-controlled stainless steel tank.  Six days of  of maceration, fermentation at 12- 18 degrees Celsius, no malolactic fermentation.
Aging: Four months in stainless steel.
Annual production: 35,000 bottles.
Notes:  Natural yeasts, unfiltered.
